What ya Need for Pancakes:
2 Eggs (whipped)
1/4 tsp Low Sodium Salt
1/4 tsp Baking Powder
1/4 cup Coconut Flakes
What ya need for Topping:
1/4 cup Strawberries (fruit of your choice)
1/4 cup Lemon Juice
Combine pancake ingredients and blend. Heat 1 tsp of oil in skillet over medium-high heat. Pour mix in skillet (making 2-3 pancakes) and cook until bottoms are golden. After 2 minutes, flip and repeat. Once done, place them on a plate. For the sauce topping, combine 1/4 cup of fruit and 1/4 cup of lemon juice. Bring to a boil over medium-high heat. Reduce heat to low and cook until fruit is tender and mixture thickens slightly. Pour on top of pancakes and dig in!
